What the federal rule asks of long-term care
Where a nursing home doesn't employ a qualified dietitian full time, it has to designate a director of food and nutrition services who is qualified in their own right: a certified dietary manager, a certified food service manager, an equivalent national certification, a degree in food service management or hospitality, or 2 years in the role plus a food safety course. The dietary manager certificate is the direct route; an NDTR qualifies under the degree route, and only if the coursework included food service or restaurant management.

Yes. The registered credential was renamed to include nutrition, so postings carry both versions and mean the same qualification.
- Do dietetic technicians work in food service?
A great deal of the profession does, and it's worth knowing before applying. Hospital and long-term care food service employs technicians for menu planning, diet order accuracy, therapeutic diets and supervising the tray line, which is a management job with nutrition training behind it.
